The Eggs I Thought Were Poached Recipe

Coddled Eggs

Also called:

  • Steamed eggs
  • Baked/ramekin poached eggs
  • Butter-poached eggs (indirect heat)

🥚My mother made these for me and called them Poached Eggs.

Coddled Eggs

An old-school, very civilized way to cook eggs, and my mom learned from the best – her mom.

How she made them:

  • Egg cracked into a buttered ramekin
  • Ramekin sits in a pan of hot water
  • Pan is covered
  • Egg cooks gently by steam + indirect heat

Result:

  • Set whites
  • Creamy or runny yolk
  • No swirling water with vinegar – I did not learn of this method until a young adult. I thought coddled eggs and poached eggs were the same thing.

This method was a popular way to make “poached eggs” where I grew up. You can season them with pepper, chives, hot sauce, cheese. . .and even a drizzle of maple syrup which is how my husband likes them.

Coddled eggs or poached eggs is a great meal to break a fast, too.
