Use the base of eggs and cheese (or cottage cheese) and pour over the leftovers from the week. A delicious way to clean out the fridge.
Frittata. . .basically it is a quiche without a crust.
I used to make one of these every Sunday and my husband would eat it for snacks or take it to work for his lunch. It came out different every week as I would use all of the leftovers in it. So one week it would have maybe some chopped up roast beef and pork chop, then all the left over veg and I may add in a handful of spinach or mushroom which I keep in the freezer.
One thing I love to add is salsa. A cup of salsa mixed in really zests it up. And you can vary the cheese to whatever you have in the fridge, and even cream cheese works in this.
The base of this recipe is always the same. The macros are for the base recipe only. To cut calories in the base you can do ½ egg white and ½ whole eggs, and/or add in ½ a cup of low fat cottage cheese and that will increase the protein while cutting some of the fat.
