| This meatball recipe is excellent and versatile if you have histamine or dairy concerns. You can add whatever spice you like from southwestern (my favorite) to Cajun or cumin. . . whatever floats your boat. If you have histamine issues or dairy issues, remove the cottage cheese and replace it with 3T olive oil. Makes 16 meatballs
Serves 4
INGREDIENTS
- 1 pound ground chicken
- 1 egg
- 1 scoop of Equip Prime Grass-Fed Collagen plain
- 1 scoop of Equip Prime Protein powder plain
- 1/4 cottage cheese – whipped (See note if dairy free or have need lower histamine)
- 2 T of parsley (I like freeze dried)
- 1 teaspoon seasoned salt, or spice of choice
- 2 T chives, chopped
- 2 – 4 T of Hot Sauce (to taste)
- 1 ounce Pork Panko crumbs
Directions
- Set oven to 350 and line your baking sheet pan with parchment.
- Whip cottage cheese in food processor until creamy texture
- Add in the collagen, protein powder, hot sauce, spices and eggs, mixing thoroughly
- Mix together ground chicken, creamy cottage cheese mixture and the panko. Mix well.
- Form into 16 meatballs – about 1 rounded tablespoon each.
- Bake uncovered for 25 minutes, or until internal temp is 165*
Per Meatball – 59 calories, 7 grams of protein
Per Serving = 234 calories, 29 grams of protein

NOTE: If you have an issue with dairy or need a lower histamine version, remove the cottage cheese and replace it with 3T of olive oil. Do not over mix this crumbly mixture. Shape into balls and bake as per instructions.
